𝗙rom catering to kitchen: why merchants are rethinking payments

When building a 4 or 5 star hotel, one strategic decision appears early: how to handle food. You can outsource it through catering. Or you can build a real kitchen with a great chef.

Both serve food, but they represent very different strategies.

. Catering delivers ready made meals. Easy to start, but limited flexibility.
. A kitchen and chef create a culinary identity. The menu evolves and the restaurant becomes part of the hotel’s brand.
. For a small hotel, catering works perfectly.
. For a luxury hotel, food becomes part of the experience and requires real infrastructure.

Payments in commerce are going through a similar shift.

𝗣𝗮𝘆𝗺𝗲𝗻𝘁 𝗦𝗼𝗹𝘂𝘁𝗶𝗼𝗻𝘀: 𝘁𝗵𝗲 𝗰𝗮𝘁𝗲𝗿𝗶𝗻𝗴 𝗺𝗼𝗱𝗲𝗹

For many merchants, payments have traditionally been purchased as a solution. A vendor provides the terminals, the gateway and the acquiring connection. The merchant simply plugs in.

. Fast deployment with minimal integration effort
. Usually tied to one provider or acquiring setup
. Limited flexibility when a new payment method appears or an additional acquiring bank needs to be integrated
. New channels often require additional integrations

This works well when payments are treated as a utility. But as commerce becomes digital and omnichannel, merchants start asking a different question: should payments remain a tool, or become part of our architecture?

𝗣𝗮𝘆𝗺𝗲𝗻𝘁𝘀 𝗜𝗻𝗳𝗿𝗮𝘀𝘁𝗿𝘂𝗰𝘁𝘂𝗿𝗲: 𝘁𝗵𝗲 𝗸𝗶𝘁𝗰𝗵𝗲𝗻 𝗺𝗼𝗱𝗲𝗹

Leading merchants increasingly treat payments as infrastructure rather than a solution. Instead of relying on a single provider, they build a payments backbone capable of orchestrating multiple banks, payment methods and channels.

. One layer connecting POS, self checkout, e-commerce and new payment rails
. The ability to integrate multiple partners without rebuilding the system
. Continuous evolution as new payment methods appear
. Payments become a strategic capability, not just a service

Just like a hotel kitchen, this infrastructure allows the merchant to design the experience instead of consuming it. The real question is no longer just how to accept payments. It is how to design the payment architecture for the next decade.

Because in the end:
